Pani Puri, Mumbai

The Mumbai form of the water-filled crisp shell.

A hollow fried semolina shell, cracked open, filled with potato and chickpea, dipped in spiced water and eaten whole in one go. In Delhi it is golgappa, in Kolkata puchka, and in Mumbai the water is thinner, sharper and more mint-forward than either.
