Bakeries, Patisseries & Cafes in Mumbai

Mumbai’s bakery trade has three layers. The oldest is the Irani and Parsi bakery — brun, pao, mawa cake, bun maska — some of these shops over a century old and still firing the same ovens. The second is the Catholic East Indian and Goan bakery of Bandra, Byculla and Vasai. The third is the modern patisserie, which began with Theobroma at Colaba in 2004 and now runs across the city.

Pao — the soft bread roll the whole city eats with vada, bhaji and kheema — is Portuguese in origin and East Indian in execution. It is the single most eaten thing in Mumbai.

• Entremets at La Folie, Kala Ghoda — the most technical pastry work in India
