Thai food arrived in Mumbai through the hotels. The Thai Pavilion at Cuffe Parade, opened under chef Ananda Solomon, is the kitchen that taught the city the difference between a green and a jungle curry, and most Thai cooking here descends from it in some way.
Vietnamese, Malaysian and Burmese cooking rarely stand alone — they appear as sections of a pan-Asian menu. The exception is Burmese khow suey, which entered Mumbai home cooking through Gujarati and Parsi families with Rangoon trading connections and is now more a Mumbai dish than an imported one.
