Japanese & Sushi in Mumbai

Japanese cooking came to Mumbai late and expensively, first inside hotels and then, after about 2015, as independent izakayas in Bandra and Khar. Fish supply is the constraint: the serious counters fly in most of their seafood, which is why Japanese remains the costliest cuisine in the city and why the number of genuine sushi kitchens is small.

Ask what is flown in that week rather than ordering from the printed menu. The good kitchens will tell you.

• Ramen, which Mumbai does less well than sushi — manage expectations
