Maharashtrian, Malvani & Koli in Mumbai

This is Mumbai’s home cuisine and it splits in two. Inland Maharashtrian cooking — misal, thalipeeth, puran poli, the Dadar breakfast — is vegetarian and built on wheat, jowar and groundnut. Coastal Malvani and Koli cooking is the older layer: the Koli fishing villages were here before the city was, and their kitchens use kokum, coconut and fresh-ground masala on fish that came off the boat that morning.

The Koli villages still exist inside the city — at Colaba, Worli, Versova, Khar Danda and Mahim. They are working villages, not exhibits, and the food in them is domestic.

• Prawn koliwada, named after the Koli fishing villages themselves
• Puran poli around Holi and modak at Ganesh Chaturthi — seasonal, not year-round
